Quinoa Chopped Salad by Cherylyn Carpenter


 1 cup quinoa
2 cups water
1/3 red pepper
1/8 cup red onion
2 cups spinach
½ cup crumbled feta cheese
3 tsp. pine nuts or almonds (chopped)
1 tsp. fresh or dried oregano (optional)
¼ cup vinaigrette

Cook quinoa with water. Chop bell pepper, red onion and spinach. Place in a large bowl with quinoa, crumbled feta, nuts and oregano. Toss thoroughly with your favorite vinaigrette or Italian dressing. HINT: do not cool quinoa before mixing with feta cheese. Gives more flavor when cheese is able to slightly melt.
